class="content__text" 🍏 Milopita 🇬🇷 this is a Milopita, a Greek/Cypriot apple pie/cake hybrid that is foolproof for people who can’t bake (like me). It’s super simple and the end result is beyond delicious. Cinnamon-y, nutty and apple-y, it’s bloody delicious and i recommend you make it asap. Shout out @georginahayden for the inspo. To make: -Preheat your oven to 170°C fan -Peel 4 apples + cut into quarters. Remove the core then finely slice. -Place the apple slices in a large bowl, toss with the lemon juice (or brandy) + 175g of the light soft brown sugar + leave for 5 mins. -Add 275g of self-raising flour, 1tspbaking powder, 100g of ground almonds, 2tsp of ground cinnamon and a pinch sea salt -Toss to combine, then add 200ml of vegetable oil, 150ml almond milk + 1tsp of vanilla extract. Mix together. -Grease a baking dish with a little oil-it’s supposed to be round but rectangle works too. -Spoon in the apple cake mixture. -Roughly chop mixed nuts, then sprinkle them over the top with the remaining 25g of sugar. -Place in the oven + bake for 45 minutes, or until golden and cooked through. class="content__text" 🥙 Arayes 🥙 these are Arayes, think of them as a Middle Eastern hamburger and you know you’re going to love them. I’ve veganised them to perfection using vegan mince and they were so Damn good. To make: -to vegan mince, add chopped onion, garlic, chilli flakes, all spice, smoked paprika, parsley, tomato paste and seasoning -mix it all together and stuff it into pita pockets -cut those in half to form quarters -cover in olive oil and fry them in a skillet meat side down -fry until golden brown. You can pop them in the oven if you’re worried about the meat not cooking -make the tahini sauce by mixing tahini, salt, lemon juice and warm water -mix until it’s smooth adding more water or lemon if necessary -I topped mine with sumac and zoug, a Middle Eastern chilli sauce -dip your Arayes in and enjoy #arayes #middleeast #arab #arabfood #arabic #araba #pita #lebanese #lebanesefood #vegan #veganuk #veganrecipes #plantbased #plantbasedfood

class="content__text" 🌶️ Korean chilli 🇰🇷 this was literally dreamy - so much so I dreamt of the recipe and had to make it. That’s not even a lie - I dream of food and sometimes I’m lucky enough to wake up remembering what I ate. This one slapped hard. To make: -fry onion, green pepper, garlic and green chilli in some oil -add a tsp of cumin, coriander and a tbsp of gochugaru red pepper flakes -Chuck in a can of green lentils and some red beans (I used @boldbeanco, is there anything they can’t do?) -add a tbsp of gochujang and a can of chopped tomatoes -add some dark chocolate at least 70% cocoa and let it simmer for as long as you like -season to taste, add some fresh coriander and serve it up -I served mine over rice with some avocado, spring onion, red chillies, kimchi, lime juice and vegan crème fraîche! There’s no real mad measurements on this one but it’s all trial and error and will taste great adding a bit of this and that here and there. class="content__text" 🍝 creamy arrabbiata 🌶️ right people you know I love pasta and this one slaps hard. It’s ready in minutes and tastes like you’ve made a sauce for hours. Super simple but so damn good. To make: -boil pasta in salted water according to packet instructions but try and keep it al dente -chop up a big handful of basil stalks and all -crush or finely chop 3 cloves of garlic -in a pan, pour in a decent amount of olive oil -fry your garlic for about a minute or two then add your basil and some dried oregano (about a tsp) -add some tomato purée, around 2 tbsps worth, and mix it around until fragrant -go in with about 200ml of vegan cream (I used @oatly) and add more tomato purée if needed -add your cooked pasta with about 1/2 cup pasta water (but reserve some extra just in case) -add chilli flakes (you can add these with the basil and garlic but I actually forgot) and some nutritional yeast -serve with some optional fresh and dried chillis, some chopped basil and whatever else tickles your fancy Simple delicious cooking that anyone can do that you won’t believe is vegan. class="content__text" 🍗 Vegan chicken satay skewers 🍗 Follow @natsnourishments and @bensvegankitchen These satay skewers were unbelievably delicious and came together in just a few simple steps. Ingredients: 1 pack of vegan chicken 1 tbsp. thick coconut cream 1 tbsp crunchy peanut butter 1 tbsp rice wine vinegar 1 tbsp dark soya sauce 1 garlic clove 1 inch piece of ginger Zest of a lime 1 tsp brown sugar 1 red chilli Spring onion Coriander Salt Method: Mix together coconut cream, peanut butter, grated ginger and garlic, soya sauce, sugar, lime zest and vinegar until smoothish. Set a tablespoon or two aside and then break your chicken chunks up and soak them in the marinade for 30 minutes. Skewer them up and grill them in a hot griddle until nicely charred. class="content__text" 🥞 pancake day but better 🥞 These Korean inspired pancakes are the best thing to make on pancake day imo so bin the blueberry and lemon and make some proper food, yeah? To make: -mix 1 cup flour, 1tbsp of cornflour (or cornstarch in 🇺🇸), a pinch of salt and 160ml of water in a bowl and whisk into a batter -cut up 150g vegan kimchi (a lot have fermented fish so please check the packaging) and add to the mix with a sprinkle of gochujaru (optional) -fry in a little oil in a hot pan and add chopped spring onion and red pepper, flip to cook on both sides -for the sauce, combine 1tsp or gochujang paste, 1tbsp of peanut butter, 1tsp of maple syrup, 1tbsp soy sauce, 1tbsp sesame oil and some warm water to loosen. I didn’t have a lime but I’d add some lime juice too -serve your pancake with some more spring onion, sesame seeds and chilli oil, using that dipping sauce to lap up all the flavours! Grating tofu is a great way to mix it up - it tastes great and becomes really meaty, picking up loads of flavour on the way. Give this one a try! -grate your firm tofu -fry off some spring onion, chilli and garlic -add some chinese 5 spice, salt and white pepper -Chuck in your tofu to get some colour -add your sauce, to make mix hoisin sauce, Chinese 5 spice, black beans in chilli oil (you can use normal chilli oil), soy sauce, lime juice, grated garlic and ginger -cook until fragrant -serve with rice, veg and whatever else you fancy but it goes great with kimchi! class="content__text" ✡️ vegan challah ✡️ for me challah is the best bread in the world. It’s a soft, almost brioche like braided loaf traditionally eaten by Jews for Shabbat dinner on a Friday night. It’s usually a very egg heavy bread and this vegan version also known as a water challah is seriously impressive. I recommend giving this one a try! To make: -in a large bowl, combine 1 1/4 cups (295g) room temperature water, 1tbsp (10g) dry active yeast (aka instant yeast) and 1/3 cup (65g) granulated sugar and whisk -leave to stand for a few minutes -add 1/2 cup (73g) neutral oil (I used vegetable) and whisk -add 5 cups (625g) of bread flour - bread flour really helped me in this bake so I’d recommend it - and mix 1tbsp of salt -combine the dough until it’s shaggy and cover with cling film and let it sit for 10 mins -pour out the dough and knead for 10 mins or until it’s elastic. You can use a dough hook or stand mixer here too -oil a large bowl and put the dough in there. Cover and leave to double in size for 1.5-2 hours -cut the dough in half and save one half. The other piece, cut into 4 pieces and roll them out flat -then roll them up and stretch them out -pinch the 4 prices together and braid (it’s an under/over kind of method and there’s loads of tutorials online) -with the other piece of dough, you can either do the same or roll it out and turn it into itself to form one large challah -spray cling film with oil spray and let proof at room temp for another 1.5 hours -pre heat your oven to 180c -mix apricot jam and some water together and brush over the challah - this gives the shine and some sweetness. Sprinkle sesame seeds on top -halfway through baking brush more jam and turn the challahs -bake for 35-45 mins until golden and when you can tap the bottoms which give a hollow sound -try to allow to cool before eating Enjoy x #vegan  #jewish  #israel  #judaism  #jew  #torah  #kosher  #jewishlife  #shabbat  #hebrew  #jewishfood  #plantbased  #veganuk #challah #veganchallah #oyveygan

class="content__text" 🥖 Korean inspired sandwich 🥖 I’ve teamed up with @delli.market for ‘In my Tote’ where they’ve sent me products from 3 independent makers and asked me to make a recipe. In the tote was @bombom_london Korean soybean sauce and gochujang, @paopopnpickles vegan kimchi and @clubcultured’s organic tempeh so I decided to whip up this insane sandwich which you have to try. To make: -flash pickle some cucumber and jalapeño in some apple cider vinegar with a pinch of salt and 1tsp of sugar -cut up your tempeh and fry in a little oil until it’s golden -make your sauce by combining 1tbsp gochujang, 1tbsp of soybean paste, 1tbsp soy sauce, 1tsbp sesame oil, the zest of 1 lime and juice of half, some grated ginger, 1 clove grated garlic and a squeeze of agave -add to the pan then add your golden tempeh back in until it’s coated -cut open your baguette, layer on some of Bombom’s kimchi mayo, your tempeh, the kimchi and your pickles You’ll love this sandwich and the DELLI app so make sure to try both out and download the app from the link in my bio! class="content__text" 🧆 sweet and sticky meatballs 🧆 yeah I know that’s a falafel emoji but they look like meatballs init. This one is so easy and tastes great. It’s a really cool way to do something different with meatballs and tastes amazing. I’d make my own meatballs next time using black beans I think as it’d compliment the sauce so nicely but these were so quick and easy plus tasted unreal. To make: -bake vegan meatballs in the oven according to packet instructions -make your sauce by adding 4tbsp soy sauce, 1tbsp vegan oyster sauce (if you can’t get this use teriyaki or hoisin), 1tsp mirin, 4tbsp maple syrup, 1tbsp brown sugar, 1tsp chilli garlic sauce, some garlic paste and a splash of sesame oil -add your sauce to a pan and heat until bubbling -add a cornflour slurry to thicken it (cornflour and water) -add your meatballs to coat -serve over rice or noodles with sesame seeds, chilli oil and spring onion Enjoy x #vegan #plantbased #healthy #veganfood #veganrecipes #tofu #veganuk #asian #asianfood #meatballs #veganuary

class="content__text" 🥅 pesto pastry lime 🥅 hello and welcome to season 2 episode 4 of 3 and In, the show where I make a plant-based recipe using three base ingredients chosen by you in the comments. Randomly selected for this week was @plantbased.lauren suggestion of pesto pastry and lime so I decide to go a bit rogue and make this spicy pesto sausage and feta rolls. These were actually so good, even if they looked a bit ugly during the process, and are well worth a try-they tasted somewhere between a sausage roll and a cheese twist and were even nicer cold. To make: -make your spicy pesto by blending up basil, garlic, half a red chilli, sundried tomatoes and some of their oil, some harissa, lime juice and a handful of cashew nuts (you want to only give this a light blitz as you want there to be some bite still) -take some vegan Richmond sausages out of their casing and into a bowl -add the pesto and mix -add some vegan feta (optional but recommended) -roll out some store bought puff pastry and cut it in half -put your sausage mixture along the mixture lengthwise and roll over -crimp it shut, brush with plant milk, add some sesame seeds and cut into smaller pieces -bake in the oven until puffy and golden (about 30-40 minutes) #vegan #plantbased #veganfood #vegetarian #healthyfood #veganuk #veganuary #veganrecipes #plantbasedrecipes #sausageroll #sausage #pastry
