class="content__text" Mexican rice and beans is my "hit the ball out of the park, every single time" meal. This feels fancy schmancy to my daughter albeit giving me the feels of eating Rajma Chawal. I guess this is that converse effect of being old school. #instantpot setting - 1. Saute mode - normal -8 mins 2. Pressure cook - high pressure - 20 mins followed by QPR AFTER 3 MINS NPR. When attempting this recipe, please take note of these pointers - ✔️Wash the rice well and soak only for 10 mins. ✔️ I used store bought salsa for this. Homemade salsa or even Sriracha is great here. Ha..that s what I call as channeling the Asian genes in me... ✔️ I have used @ciriouk chopped tomatoes here. They come in cute and handy tetra packs which are just ideal for recipes like these that call for 1 cup chopped tomatoes. ✔️ After adding the chopped tomatoes, please don't stir the mixture. ✔️Finely chopped fresh tomatoes are not a substitute for this. However, tomato puree or even Passata or any tomato based pasta sauce is great here. ✔️If you don't have vegetable stock, you can use stock cube mixed with 1.5 c warm water. ✔️This recipe works for brown basmati only. Everything including the Timings and water ratio changes if you use regular basmati. ✔️ The whole recipe as such is vegan but I added some cheese for my daughter. I used cheddar for this. You can skip this completely and just serve with guacamole and tortilla chips. The 0 min cooking is my favorite way to cook vegetables like string beans, yard long beans, chayote, Cauliflower and broccoli. I use a steamer separator to cook these veggies in batches over the weekend which takes care of my meal prep. And the veggies are cooked to perfection with just the right amount of crunch. Steps - 1. Prep veggies. 2. Place a tall trivet in the inner pot of your IP. 3. Pour in 1.5 c water. 4. Place a steamer basket over the trivet and add the veggies to the steamer basket. 5. Close the lid. Turn the valve to SEALING. ( MADE A MISTAKE IN THE VIDEO AND SAID VENTING BY MISTAKE. SORRY ABOUT THIS). 6. Press pressure cook - high pressure and set timer to 0 mins. 7. When cooking cycle is complete, do a qpr. 8. Enjoy your veggies. P.S. While I love cooking, my favorite thing to do in the kitchen is to chop veggies. I love experimenting with different cuts and always turn on some music as I do this. While I have been testing some recipes that are not in my comfort zone this week, I found myself going back to this rustic Ragi dosa after every such cooking installment. Simply because, it felt good. It felt reassuring to know that my game is still good when I mindlessly spread the batter in a concentric circle pattern on a hot tawa. I didn't have to think about the timing, the technique or a 100 other nitty gritty details. As I ate these with gusto a while back, I found myself introspecting and I realized that there is something charming about being mediocre. Yes. Dosa is mediocre. Wait. No. It's not mediocre but is pedestrian, an everyday affair in many homes. But it still makes so many people happy. All I want to say is " Be a Dosa in a world of truffle oil pasta, garlic confit and tomato consomme." In this series, I want to share with you all some vegetables that are Desi at their core but frowned upon by many for various reasons. As someone who believes that any thing can be made delicious when cooked right, this series is my humble attempt to garner people's attention towards these boring vegetables that are a power house of nutrients. The first in that line is the banana blossom. Banana blossom is nothing but the banana flower and is great for many things but particularly beneficial for people with infertility issues. Some trivia here- this vegetable is not just eaten in India but is popular in many other Asian countries including Vietnam. In India, this is much loved and revered by the people of Tamil Nadu and West Bengal. I am not aware of other states that use this. So it is only fair that I make my second recipe for the #valentinesday series using the Instant Pot @instantpotsingapore 🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸🔸 This creamy orzo is everything yum. And it is both fancy and delicious. Here is what you need for this recipe- 💜20 grams butter ( butter makes everything better, peeps) 💜1.5 tbsp chopped garlic 💜 1 cup finely chopped onions 💜 3⁄4 cup each green peas and sweet corn (both fresh and frozen work well) 💜 1 cup finely chopped spinach 💜 1⁄2 tsp each Italian herbs, crushed black pepper and red chili flakes 💜 1 cup orzo 💜 1 and 3⁄4 cups vegetable stock 💜 2 tbsp lemon juice 💜 50 grams feta #tomatobluestips for a piquant orzo- 🍴 Add other veggies like carrots, mushrooms, zucchini or baby corn as well. 🍴 Feel free to use ricotta or shredded parmesan in place of feta. 🍴 Timing is everything in this recipe.
