I guess this is that converse effect of being old school. #instantpot setting - 1. Saute mode - normal -8 mins 2. Pressure cook - high pressure - 20 mins followed by QPR AFTER 3 MINS NPR. When attempting this recipe, please take note of these pointers - ✔️Wash the rice well and soak only for 10 mins. ✔️ I used store bought salsa for this. Homemade salsa or even Sriracha is great here. Ha..that s what I call as channeling the Asian genes in me... ✔️ I have used @ciriouk chopped tomatoes here. They come in cute and handy tetra packs which are just ideal for recipes like these that call for 1 cup chopped tomatoes. ✔️ After adding the chopped tomatoes, please don't stir the mixture. ✔️Finely chopped fresh tomatoes are not a substitute for this. However, tomato puree or even Passata or any tomato based pasta sauce is great here. ✔️If you don't have vegetable stock, you can use stock cube mixed with 1.5 c warm water. ✔️This recipe works for brown basmati only. Everything including the Timings and water ratio changes if you use regular basmati. ✔️ The whole recipe as such is vegan but I added some cheese for my daughter. I used cheddar for this. You can skip this completely and just serve with guacamole and tortilla chips.
