While I have been testing some recipes that are not in my comfort zone this week, I found myself going back to this rustic Ragi dosa after every such cooking installment. Simply because, it felt good. It felt reassuring to know that my game is still good when I mindlessly spread the batter in a concentric circle pattern on a hot tawa. I didn't have to think about the timing, the technique or a 100 other nitty gritty details. As I ate these with gusto a while back, I found myself introspecting and I realized that there is something charming about being mediocre. Yes. Dosa is mediocre. Wait. No. It's not mediocre but is pedestrian, an everyday affair in many homes. But it still makes so many people happy. All I want to say is " Be a Dosa in a world of truffle oil pasta, garlic confit and tomato consomme."
