class="content__text" Cultivated meat. It’s science (but not rocket science). Read on to learn about our process. Rather than raising whole chickens, pigs, or cows, we grow only the meat we want to eat—directly from real animal cells. At scale, it will be a more humane and future-friendly way to grow high-quality food for meat lovers everywhere. We do this in four steps: 01 SOURCE The process begins by taking a small amount of cells from an animals. We created our first product, chicken, from a fertilized heritage-breed chicken egg 02 SELECT Our team selects the best cells – based on their ability to consistently and efficiently produce safe, high-quality meat – to develop a cell line. 03 CULTIVATE We kick off the cultivation process by placing cells from a selected cell line into a cultivator and feeding them with a blend of nutrients, which includes water, sugars, amino acids, vitamins, minerals, and salt. As these small batches of cells, called seed trains, multiply, we increase the size (and/or number) of the cultivators to give them more space to grow. 04 FORMULATE After two to three weeks, our meat is ready for harvest. We remove it from the cultivator(s) and separate it from the cell feed. We then take this harvested meat and (in the case of our first product) mold it into the shape of a chicken filet. Other products may be seasoned, breaded, or otherwise formulated before they are refrigerated or frozen and packaged for distribution...Next, our products are either refrigerated or frozen and packaged for distribution. class="content__text" Everyone, meet Steve Bookbinder. Steve is our Sr. Manager of Food R&D and his team works with our food scientists and sensory experts to bring delicious UPSIDE products to life. Once our meat is harvested from our cultivators, Steve and his team take that raw ingredient and use in recipes to create a final dish that’s ready to eat - whether that’s a breakfast sausage, or a potsticker, or a chicken patty. Given his past past jobs as a cook, butcher, meat scientist, food consultant, and meat product developer, one could pretty easily argue that Steve has prepared his entire professional life for his current role at UPSIDE. class="content__text" The United States Department of Agriculture (USDA) is the second group, along with the FDA, responsible for ensuring that the food America eats is safe. But what exactly is the USDA, why does it exist, and how does it ensure our safety? Let’s dig in! 👉The USDA is a federal agency in charge of agriculture and food production in the US. It was founded in 1862 by President Abraham Lincoln, and since then, it has played a critical role in ensuring the safety of our food supply. The USDA is charged with regulating and inspecting meat, poultry, and egg products, as well as creating national dietary guidelines and managing nutrition assistance programs like SNAP. 👉In conventional meat production, the FDA oversees everything until the point of slaughter, at which point the USDA takes over. In cultivated meat production, this transition takes place when the cells are removed from their nutrient source. At UPSIDE, the USDA will inspect our facility and is responsible for label approval. Just like in conventional meat factories, there'll be an inspector on-site for every production run! class="content__text" Danielle LaFramboise-Dodd (they/them), or yelley as they’re known here at UPSIDE, is our Senior Manager of Food Safety and Quality Assurance. yelley and their team works with each production and manufacturing department to ensure our ingredients, processes, and finished products are of the best quality and meet our high standards for safety. yelley’s first real job after earning their degree in biology was in the biopharma world at a vaccine manufacturing facility in Michigan. They didn’t know it at the time, but it was the beginning of their path toward a career in cultivated meat! Since then, yelley has spent over 15 years in the food industry, ranging from agricultural field sampling in the Salinas Valley, food microbiology testing in accredited laboratories, overseeing quality and safety in manufacturing facilities, and managing quality and safety programs for distribution centers and retail grocery. For UPSIDE, the FDA has reviewed our process and accepted that our cultivated chicken is safe to eat.
