From September until the cold winter months set in, the Canadian provinces of Québec and New Brunswick experience a “Season of Bounty.” Nat Geo photographer @paleyphoto channeled his passion for organic, wholesome food and agriculture, and embarked on a journey to taste everything the provinces had to offer. Video by Matthieu Paley @paleyphoto | To me, the concept of food is more than just sustenance—a cuisine is a window into its culture, history, and environment. When traveling through Canada, I wanted to use food to get close to people. I started in Montréal, meeting Chef Emili Bégin at her Foodlab restaurant, where she expressed a love for sourcing local ingredients and exploring interesting ways of combining them. In Metepenagiag Heritage Park in New Brunswick, I foraged with the Mi’kmaq People and understood their deep connection to nature. Onward, I joined Peruvian chef Adrian Pastor for a workshop in Bas-Saint-Laurent, where I learned how to use and prepare locally sourced urchins in a dish that represented this coastal bounty perfectly. Finally, I joined a local lobster fishing boat in Cap-Pelé, witnessing the extremely hard work that goes into catching this world-renowned delicacy responsibly. All-in-all this has definitely been a journey that’s inspired me back in my own kitchen! Photo by @acacia.johnson | The sun rises between the Calanais Standing Stones on the Isle of Lewis in Scotland’s Outer Hebrides. At over 5,000 years old, these mysterious stones predate Stonehenge. They are believed to have been used for ritual activity during the Bronze Age, and possibly as an early astronomical observatory. In the days and nights I shared with these ancient stones, watching the sun, moon, and stars wheel around them in the vast silence of the ether, it was easy to understand why they’ve captivated people’s imaginations for eons. They even inspired Disney’s animated Scottish tale Brave, whose protagonist Merida was guided to her destiny by her own arcane ring of stones. Photographing these megaliths at sunrise, the long shadows they cast over the earth elevated their mythical allure. It’s home to one of the tallest coastal mountains in the world and more than 150 glaciers, one of which is larger than Rhode Island. I used to raft guide in this area many years ago, but flying over it again reminded me how incredible this place is. #Alaska #exploration

Photo by @babaktafreshi // At 69ºN latitude, well inside the Arctic Circle, this fjord near Tromsø, Norway, is an incredible spot from which to view the northern lights. When I hiked down to the shore on this crystal clear March night, the aurora was completely absent, but after a few hours of patience in the cold, this impressive, earlike swirl suddenly formed near midnight. My heart was beating like a drum. It was hard to take my eyes off of the scene and concentrate on the camera. Thanks to the moonlight, the five-second exposure was long enough to reveal the landscape but not so long that it diffused the fast-moving aurora pattern. The lights occur when electrically charged particles interact with gases in the upper atmosphere. They are drawn by Earth's magnetic field to the polar regions. // When you dare to explore the unfamiliar, you feel more alive.
