Video by Matthieu Paley @paleyphoto | To me, the concept of food is more than just sustenance—a cuisine is a window into its culture, history, and environment. When traveling through Canada, I wanted to use food to get close to people. I started in Montréal, meeting Chef Emili Bégin at her Foodlab restaurant, where she expressed a love for sourcing local ingredients and exploring interesting ways of combining them. In Metepenagiag Heritage Park in New Brunswick, I foraged with the Mi’kmaq People and understood their deep connection to nature. Onward, I joined Peruvian chef Adrian Pastor for a workshop in Bas-Saint-Laurent, where I learned how to use and prepare locally sourced urchins in a dish that represented this coastal bounty perfectly. Finally, I joined a local lobster fishing boat in Cap-Pelé, witnessing the extremely hard work that goes into catching this world-renowned delicacy responsibly.
