Let this (very hot) summer be the season of icebox cakes. This yummy treat “is perfect for summer because you don’t have to turn on your oven,” says baker @samanthaseneviratne. In her recipe, store-bought ginger cookies soften into layers of tender cake surrounded by loads of raspberries and caramel cream. Once it's built, all you have to do is chill it, top it with more raspberries, and enjoy! Head to the link in our bio for the full recipe. 📷: @emmafishman 🍴: @susietheodorou 🥣: @tripleppp

Oyster sauce is something we always have in our fridge door. It’s packed with umami yet it is rarely overpowering, so it adds tons of depth to a stir-fry like this one. Serve this chicken and corn combination with rice and top it off with some fresh cilantro. No fresh corn at the market? Swap in peppers, peas, mushrooms, or summer squash. Diagnosed with minimally-speaking autism and apraxia at age three, contributor Danny Whitty lost the ability to speak shortly after it arrived. “For decades, I was unable to physically express my thoughts and feelings beyond a handful of memorized phrases,” he writes. “I had a rich universe inside me, but no way to share it.” But the rich and alluring pages of food magazines offered a refuge from those daily struggles, representing spaces of community and joy where he could belong. Eventually, he was inspired to start cooking in the hopes that, through food, he could communicate with his family and friends how much they meant to him. It's hard to think of fried shrimp without also picturing gloopy batter and bubbling, splattering oil, which is why Joy Cho (@joycho_pastry) had mentally filed away crispy shrimp under "things I enjoy but definitely won't be cooking at home." That is until she developed a method that got a similar result—golden, crispy shrimp—without deep-frying, that only required one pantry ingredient: cornstarch. Chef Sheldon Simeon (@chefwonder) is an entrepreneurial guy, almost to a fault. Between doing a run on @bravotopchef’s 10th season, opening (and sometimes leaving) restaurants on Maui, and publishing his acclaimed cookbook Cook Real Hawai’i (cowritten with @g_sny). he’s always working on something. “I don’t think I’d be a chef if I didn’t grow up in Hawai’i,” Simeon told restaurants editor Elyse Inamine (@elysei). “As crazy as it sounds, aloha spirit is a real thing. It touches you. It makes you want to rep Hawai’i hard.” Read about how Simeon’s not just bringing attention to Hawai’i’s cuisine but redefining it, at the link in our bio. 📷: Kevin J. When grilling a whole chicken, we stand by two tried-and-true methods: spatchcocking the bird so it cooks evenly and seasoning it with dry rub so you get flavor into every nook and cranny. This recipe from assistant food editor @thelescook checks those boxes, with a foolproof grilling method for the spatchcocked bird and an umami-packed dry rub (five-spice and MSG!). We’re making it all summer, and you should, too. Grab the recipe link in our bio. 📷: @emmafishman 🍴: @susietheodorou 🥣: @tripleppp
