class="content__text" Super MEATY Lasagna 😮‍💨 Ground Beef AND Ground Bison make this next level. Not sponsored, @forceofnaturemeats is just bomb dot com. ZANNNNGA 12 oz box o’ lasagna noodz 28 oz whole peeled tomatoez 1 yellow onion, diced 4-6 cloves of garlic, smashed and sliced 1 lb ground beef 1 lb ground bison (Force of Nature with beef liver n stuff is super good) 6ish anchovy filets 16 oz ricotta 3/4 cup grated parmesan 1 egg 1/4 cup chopped parsley 2 tbsp chiffonade basil 10 oz mozzarella Make yo sauce. Brown onion and garlic in a couple tablespoons of tallow, ghee, or olive oil. Set that over medium heat and cook for about 5 minutes. Spoon it out of the pan n’ put it in a bowl. Add another tbsp of oil and add in your ground beef in chunks, trying to not overlap anything. Season with salt and pep and cook over medium-high heat for about 5 minutes on the first side or until you get some serious browning. Flip it, break it up, remove it, and put it in a bowl. Repeat with the bison meat. Add the anchovy filets to the pan and right when they start sizzling and popping everywhere add in your tomatoes. As you can tell from my red hand I like to smoosh them up in the can and then dump them in. Mixie mix then add in your meats, onions, and garlic. Mixie mix , salt and pep, and reduce the heat to low and allow to gently simmer while you prepare everything else - about 30 minutes. Preheat your oven to 375F. Boil your noods in heavily salted water per the package instructions for al dente. Strain out and separate so they don’t stick together as they cool. If they do, do your best to gently pull them apart - water or oil can help here but isn’t ideal. Worst case you just have a collage of noodles that’ll still taste great. In a large bowl combine the ricotta, parm, egg, parsley and basil (holding back 1 tbsp herbs). Mixie mix. To a 9x13 pan add about 1 cup of sauce and spread it evenly. Add a layer of noodz, 1/2 of the ricotta mix, using your hands to smooth it out, then 1/3 of your mozz. Repeat ending with noods and topping with the remaining 1/3 of mozz. Bake for 40-50 min. Top with reserved herbs and extra parm. Let sit for about 15 min and then DIVE IN. 🤤

class="content__text" PURPLE sweet Potato SOURDOUGH 😮‍💨 I followed the exact same method as I did in my normal, plain ol’ sourdough but this time added in 1 purple sweet potato. No, I didn’t weigh it and I probably should have. I just boiled it till tender and then mashed it up with my hands. 💪 I also added about 300 g starter (on accident) so it definitely had a higher hydration ratio. I’m just being honest lol. I divided it into 4 mini loaves instead of 2 large ones. The rise was aggressive and very fluffy which was really fun to play with. In the future I would peel the sweet potato and lower the ratio to 70%. Annnnd make sure I measured my starter correctly. But overall, super fun to work with, soft, pillowy, and deeeelicious. #purple #sourdough #baking #bread #homemadebread #leboredchef
