class="content__text" PURPLE sweet Potato SOURDOUGH 😮‍💨 I followed the exact same method as I did in my normal, plain ol’ sourdough but this time added in 1 purple sweet potato. No, I didn’t weigh it and I probably should have. I just boiled it till tender and then mashed it up with my hands. 💪 I also added about 300 g starter (on accident) so it definitely had a higher hydration ratio. I’m just being honest lol. I divided it into 4 mini loaves instead of 2 large ones. The rise was aggressive and very fluffy which was really fun to play with. In the future I would peel the sweet potato and lower the ratio to 70%. Annnnd make sure I measured my starter correctly.
