class="content__text" Crispy Smashed Sweet Potato by @eatmoreplants.no Ingredients (4 servings) 1 big sweet potato 4 tbsp oil 6 garlic cloves 1 handful fresh basil Salt & pepper Dip: 1 cup (230 ml) vegan feta 0.5 tsp pepper 1 garlic clove Plant-milk to thin Instructions: 1. Set oven to 160C / 350F. 2. Wash your sweet potato. Keep the skin on and chop into cubes. 3. Boil the cubes until tender. 4. Cover the bottom of a glass with parchment paper and smash the sweet potato cubes on a baking tray. 5. Finely chop up garlic and basil. 6. Mix together garlic, basil, olive oil, salt and pepper in a jar and brush on the smashed sweet potatoes. Bake until crispy, approx 30-50 min. 7. Make the dip by blending the ingredients and serve!

Done in 20 minutes!👇🏼 - Chicken: • 2-3 chicken breast (approx. 300g total) • 1/2 tsp olive oil • season with salt, pepper, paprika, garlic powder, chili powder, oregano and cumin - Spicy Chipotle Sauce: • 3 tbsp light mayo / miracle whip (or 1/4 cup greek yogurt and salt) • 1-2 chipotle peppers, finely chopped (depending on your spice tolerance) • squeeze of lime (juice of half a lime) • 1/2 tsp garlic powder - Burritos: • 2 large tortillas (approx. 60g) • 1/4 cup low fat cheese (I used mozzarella) • 1/2 cup shredded lettuce • 1 tomato, sliced • 1 small red onion, sliced - Notes: • The chipotle peppers come from a can with “adobo sauce”. You can find it at any grocery store in the Mexican food aisles. • If you want to balance the spicy with sweet, add 1 tbsp of honey or maple syrup to your sauce. • To ensure your chicken seasoning doesn’t burn on the pan, make sure to cook on medium heat and optional: lightly grease the pan with oil beforehand. • You can make these burritos in large batches and store them in the fridge for up to 5 days as a meal prep. Reheat them in the microwave and even toast on a pan. - Yields: 2 Large Burritos - Calories/Macros (PER BURRITO): Approx. 404 Calories 42.5g Protein 34g Carbs 10.5g Fat - ** the calories and macros may vary depending on the brands and ingredients you use.
