100g Durum Flour
385g water
5g instant yeast
5g sugar
13g salt
60g oil

Autolyse for 45min
Bloom yeast and sugar
Mix for 10 minutes
Rest for 10minutes
Add salt and oil
Proof with folds every 45minutes
Rest overnight
Bake 400F

 Combining two of my favorite things for the big game…. NACHOS & OLIVES - @pearls_olives jalapeño stuffed speciality olives are the absolute best addition to a classic tomatillo salsa. The salty, spicy olives add a complexity to the salsa cutting through the rich cheesiness of nacho mountain!

I love when parternships happen so naturally and organically. I’ve been cooking with @pearls_olives for awhile now, and everytime I find a new use for their sweet, plump and flavorful olives - I get beyond happy to share the recipes with my friends and family. And, because I can never get enough, I always sneak a few California grown black ripe olives onto my nachos as well, for a rich buttery kick 🫒⚡️ 

1lb Tomatillo
1 jar @pearls_olives Specialties Jalapeño Stuffed Olives
8 cloves garlic
1 jalapeño
1 onion
1 head cilantro
2 limes

Rough chop all of the vegetable and toss with olive oil and salt. Roast until tender and charred. Blend with lime and cilantro.
