class="content__text" Another winner for making the most of your courgette/zucchini plants - one of my favourite Italian dishes…stuffed zucchini flowers! Very quick and easy to do. Pick the male flowers (the ones without fruit, just a stem), check inside for insects, then stuff with a 50:50 mix of ricotta & soft feta/goats cheese, lemon zest, capers and chopped fresh mint. Dip in batter then fry in oil until golden and crispy. The outside is crispy, whilst the flower itself is delicate and silky, the cheese is melted inside…such a delicacy you’ve got to try! class="content__text" If you’re growing courgettes/zucchini you’re probably struggling to keep up with them (there’s only so many zoodles and stir-fry’s you can eat!). I’m getting 4-6 a day! Here’s a great tip - peel and chop them up and freeze them in ziplock bags…then chuck em’ in smoothies and use to make ‘ice-cream’. Swipe right for a recipe from YUM for Berry, courgette & banana soft-serve…it’s soooooo good! And what’s the best is that my boys say they “hate courgette”, BUT they LOVE this ice cream🤣 As the peeled flesh has such a mild flavour you don’t taste it at all, it just provides a creamy texture in smoothies and ‘ice-cream’🤙 Ps. If using a marrow (over-grown courgette), cut the watery seeds out first and just use the creamy flesh

class="content__text" Lemon and sugar crepes. A good way to start Sunday🍋☀️ To make the crepes, whisk 1/2 cup plain flour with 3 eggs and (gradually) 2/3-3/4 cup milk (any kind) until batter is smooth. The consistency should be like thick pouring cream. Whisk in 2 teaspoons sugar and a little finely grated lemon zest. Leave batter to rest for 5 minutes or so. To cook, heat a knob of butter/coconut oil in a cast iron (or other non-stick) fry pan on medium heat. Once it’s melted, tip the melted butter/oil into the batter and stir in. Pour 1/2 a ladle of batter into the pan and swirl around so the batter spreads very thin and evenly over the base. You want paper-thin crepes. Lower heat and cook for 1 minute until lightly browned, then flip over carefully with a spatula to cook other side for a minute. Serve crepes with lemon wedges and sugar - sprinkle over a little sugar, squeeze over lemon juice and roll a crepe up😋

Milly has her own kids book coming out this December about her life and mischievous antics🤗It tells the story of her being raised with her sheep brothers Billy and Jimmy, and eventually finding a best friend in Tilly. Today they are all still one big happy family living in their own big paddock with a gully, lots of bush and their own stream. Will have to take you on a tour to meet them again soon and you’ll see how they’ve grown!
