 Posted this in stories yesterday and some of you asked for the recipe. Easiest zucchini muffin recipe ever. Just mix it all together in a large bowl, dispense into the muffin cups and pop them in the oven. Here you go!

2 large eggs, whisked
1 cup sugar
2 teaspoons vanilla extract
3 cups (360g) packed grated zucchini. If zucchini is really dry, add 1/4 cup milk 
1/2 cup olive oil (Or 3/4 cup melted butter)
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon, optional. I usually just sprinkle some as I don't want it too "spicy"
1/4 teaspoon salt
1 cup walnuts, optional 

Bake them in the preheated oven at 175°C for 25-30 min (till golden brown). We slather salted butter on them while they’re still warm.
