Ingredients: 1 Cup Rolled Oats, 1/2 Cup Oat Flour, 1 Teaspoon Cinnamon, 3/4 Teaspoon Baking Powder, 1/4 Cup Ground Flax Seeds, 2 Tablespoons Chia Seeds, 2/3 Cup Dried Cranberries, 1/2 Cup Pumpkin Seeds unsalted, 2 Teaspoons Vanilla Extract, 1/4 Cup Maple Syrup, 1/4 Cup Applesauce, 3 Tablespoons Coconut Oil, 2 Tablespoons Milk of Choice

Directions: 
—Start by preheating the oven to 325 F.
—Line a baking sheet with parchment paper and set aside.
—In a large bowl, mix together all of the dry ingredients followed by all of the wet ingredients.
—Stir everything to incorporate well, and let sit for 10 minutes.
—If the mixture is too thick, feel free to add in another tablespoon or two of milk.
—Once the batter has set, scoop batter to form 8-10 cookies on your baking sheet.
—Use the palm of your hand to gently press down on the cookies and flatten them. This will ensure that they don’t spread too much!
—If desired, sprinkle some more pumpkin seeds and/or dried cranberries on top of the cookies.
—Bake for 15-16 minutes. Once done. remove from the oven, let cool, and enjoy!
