class="content__text" As seen on @masterchefuk last night 🔥 • Charcoal Burnt Meringue with Seasonal Fruit and Arbol Chilli - topped with italian meringue burnt at the time of service with a flaming hot charcoal. • Braised Artichoke & Pardina Lentils - cooked until tender in a vegan dashi stock made from infused kombu and chipotle chilli, the sliced artichokes are then charred on the wood fire and placed on top of the lentils to serve. • Pork Belly Taco with Pico de Gallo & Chicharon - salt brined for 48 hours, then slow cooked in water for 36 hours, the pork is finished on the grill to bring a touch of smokiness and brushed with an el pastor marinade. • Charred Leek with Romesco Sauce - blackened directly on hot coals and then wrapped in foil to steam in it’s own juices, this dish is both sweet and smoky. class="content__text" To celebrate Cinco de Mayo this year our executive chef @petersancheziglesias partnered with @fernandohdezr from @moyuelorest to create a one-night-only menu celebrating the holiday's roots in Puebla, Mexico. Post dinner, Decimo turned into a late-night salsa club which meant lots of dancing (good and bad 😈) all night long. Along with a whole lot of Decimo classics and @casamigos Tommy's Margaritas, the five-course set menu included: • Pickled Adobo Mussels with Escabeche Carrots • Roasted Leek with Labneh and Chilli XO • Seared Scallops and Mexican Corn Esquites • Duck Carnitas Smoked Plaintain Enmoladas • Pumpkin seed ice cream with crumble and wafers A huge thank you to Fernando & @casamigos for collaborating with us on this project. Together the chefs have created a collaborative menu with classic Decimo favourites served alongside Steamed Mussels with Pickled Adobo, Seared Scallops with Corn Esquites, Smoked Plantain Enmoladas with Duck Carnitas and all finished off with a Pumpkin Seed Ice Cream.
