This is the time for giving. As much as Christmas is wonderful for so many, it isn’t so for others. It’s one of the hardest times for those in need. @colessupermarkets has a beautiful initiative with their food rescue partner secondbite, which they celebrated 10 years of work with this month. They have provided the equivalent of more than 160 million meals more than 160 million meals for those in need. This year you can help provide 10 meals by purchasing a $2 donation card at checkout. How to master the roast potato, hasselback edition 😌 10/10 crunch factor every time! 🔥🔥 Hasselback potatoes with parsley pesto Serves 6 as a side Prep 15 mins Cooking 50 mins 6 medium Red Royale potatoes, halved lengthways ¼ cup (60ml) avocado oil ⅓ cup (25g) finely grated parmesan 250g pkt Coles Australian Cocktail Truss Tomatoes ½ cup flat-leaf parsley leaves ½ cup basil leaves ¼ cup (40g) pepitas (pumpkin seeds), toasted 1 small garlic clove 1 avocado, stoned, peeled, chopped 1 lemon, juiced 1 Preheat oven to 220°C. Line a large roasting pan with baking paper. Place 1 potato half on a clean work surface. Place a chopstick along either side of the potato half. Use a small sharp knife to thinly slice potato down to the level of chopsticks at 3mm intervals (this stops you from cutting all the way through). Place, flat-side down, in the prepared pan. Repeat with the remaining potato. Drizzle with 1 tbs oil and season. Roast for 40 mins or until golden and tender. 2 Sprinkle the potato with 1 tbs of the parmesan. Add tomatoes to the roasting pan. Roast for 10 mins or until tomatoes begin to collapse and potato is crisp. 3 Meanwhile, place the parsley, basil, pepitas, garlic and remaining parmesan in a food processor. 4 Process until finely chopped. Add the avocado, lemon juice, remaining oil and 2 tbs water. Process until well combined. 5 Drizzle the potato mixture with parsley pesto to serve. #roastpotatoes #crispypotatoes #hasselbackpotatoes

Have you tried Christmas crack before? Well, THIS is your sign to make it! 😍🍫🔥 Save the recipe. Christmas Crack Serves 12 Prep 5 mins (+ 5 mins standing, 30 mins cooling & 30 mins chilling time) Cooking 15 mins 13 Coles Cracker Squares 125g butter, chopped ¾ cup (165g) brown sugar ½ tsp ground ginger ½ tsp mixed spice 1 tsp vanilla extract 200g Coles Milk Choc Buttons Coles Christmas Festive Red & Green Funfetti Sprinkles, to decorate Coles Christmas Festive Gingerbread & Santa Edible Icing Decorations, to decorate 1. Preheat oven to 190°C. Grease a 20cm x 30cm (base measurement) lamington pan and line with baking paper. Arrange the crackers in a single layer over the base, trimming to fit if necessary. 2. Place the butter, sugar, ginger, mixed spice and vanilla in a medium saucepan over low heat. Cook, stirring, for 2-3 mins or until the butter melts and mixture is well combined. Increase heat to medium and bring to the boil. Cook for 3 mins or until the mixture caramelises and thickens slightly. Carefully pour the toffee evenly over the crackers. Bake for 10 mins or until golden and bubbling. 3. Sprinkle the hot toffee with choc buttons. Set aside for 5 mins to melt the choc buttons, then use a knife to spread out in an even layer over the toffee. Decorate with sprinkles and icing decorations. Set aside for 30 mins to cool. Place in the fridge for 30 mins or until set. 4. Break into pieces to serve. #chocolatebark #christmasrecipe #christmasgift
