For week 3 of our Beauty Packed with Goodness Month, the gorgeous @rozannapurcell has taken over our page to bake some delicious, vegan Snickers Protein Balls. Grab your ingredients and bake with us, here's what you'll need; 200g oats (porridge, rolled or jumbo oats will all work) 140g dates, pitted (normal dates not Medjool) 100ml unsweetened almond /oat milk 4 tsp peanut butter -pinch of sea salt For the topping: 250g dark chocolate handful of roasted peanuts, roughly chopped Equipment to have ready: -a food processor (not nutribullet!) -bowl for meted chocolate -2 spoons - fork - have your ingredients weighed out. - Flat tray & parchment paper -space in your fridge. - saucepan and metal bowl for melting chocolate In your food processor blend the oats into a textured flour consistency. Next add your dates (make sure they’re pitted!) break down the dates until they are in tiny pieces. Add your peanut butter, non dairy milk and salt. Blend once more into a firm dough- not too wet or dry. It should stick together easily. Roll into 16 balls. Coat in your melted chocolate and sprinkle over your chopped nuts.
