Nothing like an easy one pot stew.
It has mostly rained here today and as I far as I can see everywhere else has been basking in the sun. What is going on ?????

Recipe 
1kg braising / stewing beef cut into cubes 
Olive oil for sautéing 
4tblsp flour
Sea salt 
4 carrots roughly diced 
1 parsnip roughly diced 
1 butternut squash roughly chopped in cubes
1 large white onion sliced 
4 cloves garlic sliced whole
1 can of Guinness
1 beef stock cube.
250ml hot water 
1 packet of bacon lardons or chopped pancetta .
4 tablespoons of tomato purée.
Fresh thyme sprigs.

Preheat oven To 150°C.
Coat the beef cubes in flour and season.
Heat oil in casserole dish on hot hob (I used my le creuset).
Lightly brown beef all over.
Remove from Casserole dish and place meat aside on a plate.
Over a medium heat on the hob.
In the same casserole dish add some more oil and sauté the onion, bacon, garlic, carrot parsnip and butternut squash. 
Add back in the meat pour over the can of Guinness and add the stock cube to the hot water and pour over also .
Add 4 tablespoons of tomato purée.
Stir altogether, add some sprigs of fresh thyme.
Add lid to casserole dish.
Place in oven at 150C for approx an hour or until beef is tender and falls apart.
Serve with potatoes or brown rice and lots of buttered crusty bread to soak up the juices 

* you can switch Guinness for extra stock or use some red wine with beef stock too.
