Black Truffle Dry Brined Wagyu 🥩

Dry brining is a technique that involves salting a steak at least one hour prior to cooking (up to 2 days), and has two primary benefits. It seasons the beef deeply, but also dries out the exterior for a significantly better crust. Using truffle dust (70% dried truffles but also filled with salt), we dry brined an incredible 75-day dry aged Australian wagyu ribeye.

Topping it off with both dried and fresh black truffles was just an experiment, and I would have never expected such incredible results. 

To rehydrate the dried truffles as well as ensure a perfect internal temp, I sous vide the steak at 130F right before searing over coals. The searing process took longer than expected due to all the moisture within the layer of truffles, but the end result was a perfectly toasted crust. The funky dry age flavor combined with earthy truffles is truly a match made in heaven.

Happy 4th of July! A red white & blue steak cake for Americas birthday that would make Ron Swanson proud. While the fireworks did a number on the mashed potatoes, the steaks still tasted great!

Today also marks exactly 1 year since I posted my first cooking video on the internet. I can’t put into words how much I appreciate each of you and the support you’ve given me. Waking up and being able to do what I love each day is truly humbling, and it’s my goal to give back in as many ways as I can. “The place where they cook in front of you”. Growing up that was my name for Hibachi restaurants and those dinners were the highlight of the year.

My order never changed. Virgin Shirley Temple with the ribeye/chicken combo. The chefs, the sauces, and the free shrimp made it great. But what made it truly special was the flaming onion volcano which blew my mind each and every time. Turns out, it’s pretty simple to make!

After successful dry age experiments using wine & whiskey, it was time to incorporate a fresh ingredient. Lime zest combined with tequila immediately came to mind, and I’m ecstatic that I gave it a shot.

My concern was that the zest would start to rot, amazingly it not only dried out perfectly, but the flavors penetrated deeply. Even after cutting away the bark, we were left with a citrusy, sweet, and earthy final product.

This has opened my mind to all the possibilities in the world of dry aging. Coffee, chocolate, black truffles? Everything is on the table!
