Summer vibes β˜€οΈ Escaping from an overheated and polluted Tbilisi air to a quiet place in Kakheti was such a good decision! We paid 350 GEL ($110) for a triple room with breakfast and pool - it's an average price for this kind of hotel in Kakheti. The design by @esmakhetsuriani is very remarkable, combining local ethnic motives and modern style. I REMEMBER YOU AS A TINY CHILD! Heard those words from far relatives or friends of friends of your parents? Me too, but this time it was me who was telling it to the vineyard of a small new winery in Ruispiri. In the end of 2018, I was attending the wine course with its co-founder, and after the course he invited us to Ruispiri, to show his new passion project. There was a big pit for the qvevri cellar, and teeny weeny newly planted vines. In June 2021, the little vines are not so little anymore, as you can see. They are actually Europeans, which is rare for Georgia. Who has heard about the Georgian Traminer, for example? Soon, you will! In the meantime, Gio has been making wine from Rkatsiteli, Kisi, Mtsvane, Khikhvi and Saperavi, and we could taste the fruits of his work. I predictably fell for Mtsvane πŸ˜‚ but the rest was also very good! It was also quite exciting to compare Rkatsiteli from two different growing zones. I rather preferred Akhmeta, and my guest like Kurdghelauri more. Soon Gio will finish the kitchen and will be able to host everyone who appreciates good wine and food. - Oops, the barrel is empty! - Levan exclaims, his eyes widely open, and immediately bursts into laughing, after I murmur "Oh... it's okay?" Our visit to Tiko Estate production was as light-hearted, as Rkatsiteli and Khikhvi that we tasted from the barrel. Joke after joke, sip after sip, joke after sip, sip after joke. Once I leave the latter aside, I can definitely tell that this is one of the most promising wineries that work in the classical style. Very fine whites (Rkatsiteli, Khikhvi) and potent, but very round reds (Saperavi) impressed me a lot. I'm not a fan of conventional classical Georgian whites exactly because they often show a lack of character due to a lot of fining and cleansing, but this kind of Rkatsiteli is made without heavy stuff, is smooth, aromatic, gentle and can be very welcome both at a fun party and at a fancy dinner. Levan also claims that his Saperavi is like Thor, but I think it's actually Loki in disguise, because it is dark, very tricky and hides its quite high alcohol behind round tannins and delusively mild mouthfeel. I also have a bottle of amber Kisi at home, too - it's awaiting an occasion to be tasted 😁 so skin contact whites are also on the list! Biisi Waterfall - a refreshing picnic spot in Shida Kartli πŸ’¦ The hike from Biisi village is quite easy, but be sure that you wear proper shoes, because you'll have to cross the stream many times (16-18 times one way). After the hike and several dips into the cold water, the dinner and overnight at @nikavacheishvilismarani in Ateni felt like a proper thing to do! It was a hot day in July 2018, when I was roaming around the left bank of Alazani river in Kakheti, checking a couple of wineries that could potentially become a nice addition to the portfolio of my newborn wine tourism enterprise. Tornike made an impression of a generous host and passionate winemaker from the very beginning. It was exactly the time, when he was able to release the wine from the freshly finished cellar, and Chubini Wine brand stood up and started walking towards Asian export markets. Only three (or two, if we don't count a global gap year) have passed since that moment, and I can't be more proud of Tornike, who ‴️massively improved the quality of his wine (even though it was always clean and pleasant), ✈️ sells his wine in Japan, China, the US and even France, πŸ₯—πŸ–πŸ· offers wonderful hospitality to my guests and many others, and even managed to plant a new vineyard πŸ‡next to the place that was completely empty five years ago. Did I forget that he also won an international πŸ‡ΊπŸ‡¦πŸ‡¬πŸ‡ͺπŸ‡¦πŸ‡²πŸ‡²πŸ‡©πŸ‡±πŸ‡» TV showπŸ“Ί, where 8 wine cellars from 4 countries were competing in wine and hospitality? 😁😁 I can't be more proud, really 🧑 The best of luck to Tornike and his wife Lika, who is also a big part of the cellar progress! Talking about Okro's Wines at @johnokro and @jennyokruashvili restaurant in Sighnaghi. Jokes aside, this is my favourite place to eat and drink in this town! Farm food sourced within a couple of kilometers, iconic natural wines and chacha that is surprisingly mild for its ABV 😁 In my glass in Budeshuri (a.k.a. Saperavi Budeshurisebri). The more I taste the wines made of this grape, the more I like it! Being a close genetic relative of Saperavi, it is full-bodied, but not as meaty and tannic as Saperavi can be. Ripe red fruits, smokiness, pleasant acidity make Budeshuri a proper gastronomic wine. QVEVRI WINE = AMBER WINE = NATURAL WINE? πŸ™…β€β™€οΈNo and no! But the topic can be confusing for those who only start exploring this old new world of wine. 🏺 Qvevri is a winemaking vessel made of clay. It doesn't influence the colour of wine, but does influence the style. A clean qvevri shouldn't give any extra "earthiness" to wine. It only insures microoxidation more intense than in a stainless steel vat and less intense than in a barrel. The shape of qvevri ensures the natural filtration of... πŸ‡...skin contact white wine a.k.a. amber wine, a.k.a. orange wine! The amber colour comes from the grape skin of white grapes that are fermenting together with the juice and often stay in the sealed qvevri for 6-8 months after the fermentation is over. Red wines usually spend much less time with their skins: 2-4 weeks only. 0️⃣ Natural wine often means a low intervention method: organic, often dry farming; zero cultural yeasts and other additives during the winemaking process, zero or up to 35 mg of sulfites per liter. So basically qvevri wine can be also 🀍white, ❀️red and even πŸ’—rose, 🧑amber wine can be made in a stainless steel vat, a barrel, a concrete egg or a demijohn, and natural wine can be also made in any of those vessels of any good organic grapes, with skin contact or without. CHEAP TOURS ARE A MYTH Yesterday I dropped my fingertips into a tour price discussion in one of the Georgian expat groups on Facebook. Some people felt overcharged, because they are not locals. I'm ashamed to confess that yes, this practice does exist in Georgia, as well as in many tourist destinations, where the traveler doesn't do the research and goes for a trip with an "authentic" local with a shabby car, or books a tour with plenty of hidden costs. But let's talk a bit about the price building 🏷️ Imagine, you book a tour that takes you to a wine region for the whole day and costs only $10. What can be wrong with that? πŸ™€ It can be an older bus or a terribly underpaid (or less professional) driver. πŸ™€ It can be guided by a terribly underpaid (or less professional) person. πŸ™€ Nothing else is included, so you just have to pay what is to be paid in the places you're brought to. πŸ™€ If there is something "complimentary", the quality can be poor, or you'll be mildly forced to buy something after enjoying a freebie (hello, big roadside wineries). πŸ™€ If the rest is free, how does the community profit? It's basically the same issue as with organic, fair trade coffee β˜• 🀝 Either you prefer to pay for the quality and the proper work conditions of people who made it for you πŸ‘¨β€πŸŒΎπŸ‘©β€πŸŒΎ, πŸ–• or you simply don't care if the driver and guide can make ends meets, working more than 10 hours a day (guiding and a bit of babysitting, too), πŸ’Έor well, you are really on budget, the public transport is confusing, and there is no other choice. 🍷If an average small winery I usually pick makes excellent wine, offers farm produce for lunch, and charges $20-25/person for a good experience, how can I make a tour cost less? πŸš—If I hire a professional driver with a new, clean minivan for you, you travel from 9 AM to 8 PM, covering 450 km, and you're 4 people and not 20, how can it fit into $10/person? Being aware that not everyone can afford an all inclusive, authentic experience, I realize that my niche is tiny and I probably won't become a billionaire running a tailor-made tour company πŸ’” But at least I know that what I do is fair, and my winemakers and farmers are happy ❀️

- KHVANCHKARA FROM KAKHETI? What?! - Phew, you confused it with Kindzmarauli... My face says it all: it's easy to get lost in the archaic Georgian PDO system for those who are used to more complex ones. Out of 24 protected designations of origin, only several ones are actively used at the moment. ⚑ Tsinandali ⚑ Mukuzani ⚑ Kindzmarauli ⚑ Napareuli ⚑ Khvanchkara ⚑ Tvishi ⚑ Bolnisi ⚑ Manavi ⚑ Tsarapi ⚑ Khashmi's Saperavi ⚑ Atenuri (ave @soso.vanishvili7 and Chateau Ateni for making the only sparkling PDO tick again) The PDOs protect the certain area of growing and bottling + vinification method. No grand crus over there yet. On the positive side, it gives the small wineries freedom of experimenting and labeling as well as no restrictions on export, if the lab analysis is okay. What are your thoughts?
